  • 100g active sourdough starter

  2. Adding Starter & Salt: Mix in the sourdough starter and salt.
  3. Bulk Fermentation: Let the dough rise for 4-6 hours, folding every 30 minutes.
  4. Shaping: Shape the dough into a boule and place it in a proofing basket.
  5. Final Proof: Refrigerate overnight for a slow fermentation.
  6. Baking: Bake in a preheated Dutch oven at 230°C (450°F) for 20 minutes covered, then 20 minutes uncovered.
  7. Cooling: Let it rest for at least an hour before slicing.
